This is a three bean specialty blend composed of a Watermelon Co Fermented Infused Castillo from Jairo Arcila, A Washed Papayo from Felipe Arcila & a Washed  Catuaí, Caturra, Catimor from Datanlí Nicaragua.

First, the Colombian was grown by Felipe Arcila at the farm Santa Monica. This coffee is harvested following strict ripeness criteria, Floated and hand sorted to remove any defects. This coffee was exposed to a dry anaerobic fermentation period of 48 hours with the pulp on. During this fermentation stage, cherry and wine yeast were added. The cherries were then pulped and placed to dry on raised beds until the ideal moisture. This coffee is harvested following a strict ripeness criteria, ensuring that only perfectly ripe cherries are selected. Then, the cherries undergo a meticulous quality control process, including hand-sorting and flotation, to remove any low-density, underripe, or defective cherries. Then, the cherries undergo a dry anaerobic 48-hour fermentation.

Second, we have our Washed Papayo from Felipe Arcila in which the cherries undergo a 30-hour underwater fermentation—a critical step that enhances the coffee’s flavor profile. This is a controlled fermentation process as it allows the sugars, organic acids, and other compounds within the cherries to break down gradually, stimulating the development of a delicate yet interesting profile.

Finally we have a Washed  Catuaí, Caturra, Catimor from Datanlí  Nicaragua.

Datanlí is produced by medium and small-scale producers from close to Datanlí, a small town inside the municipality of Jinotega. This town and the community which lives there is famous for being self-sufficient and welcoming to travelers, who come from all around the world to witness a unique example of the coexistence of environment and man. Here the agriculture which takes place does not detract from where it grows but forms part of the greater ecosystem.

Jinotega is a coffee-producing department in Nicaragua known for being highly productive and focusing on commercial qualities. However, in the last decade, there has been a change in production systems and coffee processing practices focused on achieving a balance between quality and productivity. This has led producers to produce high-quality coffees consistently. About 7 producers contribute to Datanlí blend, and they manage 10-15 hectares of farms where they have grown mainly varieties such as Catuai, Caturra, Catimor, Parainema, Obata, and Java, which have adapted very well to the micro-climate and soil types. In this region, growers are part of the Caravela Education Program and receive only personal support year after year. Over time we have established fruitful relationships with whom we have worked for more than 5 years. Also, each harvest, we welcome new growers committed to the production of sustainable high-quality coffees while implementing environmentally friendly practices.
