We are proud to announce the first coffee in our Premium Coffee Series that each come in a collector tin, is now on bar at our Roastery Outlets in Cork City.
The first coffee we are featuring is a Natural Colombian called La Estrella, coming in at 90 Q Grade!
This coffee has an unusual flavour profile that is full of complexity and excitement. With notes of Mushroom, Malt, Bordeaux, and Cedar this coffee will leave you longing for more to discover all the complex flavours that are waiting for you.

The farm has plantain crops as shade trees to protect coffee from strong air currents, so maintenance is carried out on these plantain crops every year.
During the harvest Castillo variety is picked every 21 days when the cherry has a deep dark red color. Then, balseo process is done, to remove the floating cherries; these are the ones with lowest quality.
The cherry is then fermented for 16 hours, then is pulped and fermented in a tank for 24 hours. Finally, coffee is washed 3 times and drained for 2 hours, to be taken to the drying area.
The Coffee is then dried in layers maximum of 3 cm, is moved 2 to 4 times a day with a wooden rake and drying time varies between 8 to 14 days.
