Back in February we visited Alejo on his beautiful farm Volcán Azul. Alejo belongs to the fifth generation of coffee growers. He enjoys experimenting with different varieties and processes produced at his farm.
Alejo works with a limited selection of exclusive micro and nano batches with unique exotic qualities that come from our menu of varieties such as Caturra, Geisha, Kenya SL-28, Villasarchi, Sarchimor, Mocca, among others. These come in different process presentations like washed, honey or natural.
Once the cherries are picked they are then put in shaded anaerobic tanks with a PH of 4.3 with a fermentation temperature of 22 degrees for six days, Once the coffee reaches a PH of 3.4 it is then removed and dried on the patio for 15 days until it reaches a moisture reading of 11.5%.
