Yonal Fernandez is a producer in Colosay, Jaen, with 3.5 hectares of farmland. He grows exclusively Bourbon, but he has different parcels of land on his farm where he is experimenting with coffee tree distancing and its impact on yield. Harvest runs from May to July with its peak in June.
Yonal loves agriculture and is proud to be learning every day to improve the quality of his coffee. In the future he hopes to build a brand for his coffee, to plant more varieties and create a model farm
This coffee is part of a sourcing program through an organisation called Origin Coffee Lab. The coffees are either micro lots or communal producer blends from the areas in the north around Jaen and San Ignacio. The farms are normally between 1-3 hectares and are family run. They harvest, pulp, ferment and dry the coffees at the farms. If the producers are part of a premium program, they will more likely invest in their production to create potential micro lots.
